why nicola’s?

Every bar is made from scratch, from whole cacao beans to finished chocolate, in my small Devon chocolate factory.

Bean-to-bar means I make the chocolate myself, at every stage. I roast, crack, grind, refine and temper each batch by hand, adjusting the process to suit the character of the cacao.

It’s slower than industrial chocolate, and that’s exactly the point.
